11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed freshly prepped lettuce over filled inside a metal container inside the prep top. Observed cooked noodles overfilled inside a plastic container inside the walk in cooler. COS: person in charge separated the food into smaller portions; and placed in the walk in cooler to which is to rapid cool; discussed with person in charge the prep top equipment will only maintain the temperature that it begins with.
