Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed handwashing sink located by produce sink packed with utensils. CA. PIC instructed to remove all utensils from handwash sink and advised that a handwashing sink shall be maintained so that it is accessible at all times for employee use, and a handwashing facility may not be used for purposes other than handwashing.

Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed cardboard being used to line shelves in dry storage area. CA. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
15C - nonfood-contact surfaces clean

Observed build up grease on hood above cooking equipment. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed an accumulation of dust on vents and ceiling tiles in main kitchen. PIC advised to clean vents and ceiling tiles.
