6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed one reach in cooler, and TCS foods stored inside of it, at the bar with an ambient temperature above 41F. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: Dairy Items that were stored in cooler were discarded (whipped cream, Milk, Oat Milk, and Almond Milk). Discussed with PIC to not store any dairy products in cooler until it is repaired. Use all other working coolers instead.
