This location has a variance for the pizza sauce that allows to hold the pizza sauce on TPHC for no more than 10 hours. PIC stated that another employee prepped the pizza sauce the night before and stored them on the counter top at room temperature. CA: When using tphc the food item must be discarded within the 10 hours per the variance. COS: PIC voluntarily discarded the pizza sauce. Suggested to train all employees on how to hold the pizza sauce on TPHC.
