6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS (time/temperature controlled for safety) food cold holding at temperatures above 41F, noted with asterisks in temperature log. Observed a bag of chopped lettuce on counter top. Observed portioned bags of cooked beef stored in prep-top cooler stacked above rim of container.
COS: PIC moved some bags of cooked beef into new container and stored in cooler below. Staff member placed bag of lettuce in cooler below prep-top. Temperature of bag of lettuce was rechecked in an hour and read as 44.
CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, TCS food shall be maintained at 41°F.
