Food items included 2 containers of sopas pollo (chicken soup) date marked that they were prepared on 11/10/25, 1 container of sopas res (beef soap) dated marked that it was prepared on 11/22/25, and cooked bean tamales, date marked that it was prepared on 12/01/25. CA: A food that requires date marking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. COS: The PIC voluntarily discarded these food products.

CA: Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: P safe P, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition. COS: PIC discarded the cut plastic bags. Suggested using parchment paper for this purpose instead.

Observed TCS foods (bean paste and tomato broth) being reheated using the steam table. The PIC stated that the food had been removed from the cooler and placed on the steam table about 1 hour prior. CA: Reheating for hot holding shall be done rapidly and the time the food is between the temperatures of 41°F (5°C) and 165°F (74°C) and 41°F (5°C) and 135°F (57°C) for commercially processed food, may not exceed 2 hours. Advised that steam tables are not designed to rapidly reheat foods. COS: The PIC had an employee reheat the foods on the stove top to 165F+. The foods were then placed back onto the steam table to hot hold. Showed the employee how to check temperature using a sanitized thermometer.
