4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer bucket with no registering level of chlorine. Observed soap residue in rags and bucket.
CA: Chlorine sanitizers applied to food-contact surfaces shall be at a concentration between 50-99 ppm
COS: PIC washed bucket and remade sanitizer to 50ppm. Advised PIC and staff to use bleach and no soap when making sanitizer.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed shrimp thawing in meat sink upon arrival. PIC informed us shrimp had been taken out of freezer around 11am. Inspector took temperature of shrimp at 2pm of 70F (3 hours since thawing began).
TCS food shall be thawed completely submerged under running water: at a water temperature of 70°F (21°C) or below; with sufficient water velocity to agitate and float off loose particles in an overflow; and for a period of time that does not allow thawed portions of a raw animal food requiring cooking to be above 41°F (5°C), for more than 4 hours including: (I) The time the food is exposed to the running water and the time needed for preparation for cooking, or (II) The time it takes under refrigeration to lower the food temperature to 41°F (5°C).
COS: PIC drained shrimp, added ice and moved container to the bottom of the prep-top cooler to facilitate cooling.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed rag used to clean prep surfaces stored on prep top cooler.
CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration of 50-99ppm chlorine, and laundered daily.
COS: Staff member placed rag into sanitizer bucket
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(r),(s) - frequency, removal of refuse, recyclables and returnables often enough to minimize odors and attracting pests; receptacles or vehicles, removal from premises in approved manner (c)
Observed a large pile of un-bagged, uncovered garbage behind the dumpster.
CA: Refuse shall be removed from the premises at a frequency that will minimize the development of objectionable odors and other conditions that attract or harbor insects and rodents.
