4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed the inside-top of two microwaves with a build up of food debris. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: Employees cleaned and sanitized both microwaves.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed a TCS food/beverage cooling using not effective methods. Observed milk with oats cooling in a tall plastic container (about 8 inches tall) with ice only touching the bottom 1-2 inches of the container. CA: TCS foods shall be cooled by Placing the food in shallow pans; (ii) Separating the food into smaller or thinner portions; (iii) Using rapid cooling equipment; (iv) Stirring the food in a container placed in an ice water bath; (v) Using containers that facilitate heat transfer; (vi) Adding ice as an ingredient; (vii) Other effective methods. COS: PIC placed milk with oats into a shallow, metal pan and placed that pan in an ice bath to finish cooling.

Observed inside top of one microwave oven peeling and rusted. CA: Microwave ovens shall be in good repair. Advised to replace microwave oven.
