6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed Countertop refrigerator not maintaining proper cold hold temp at 41 degrees or below- yogurt temped at 48 degrees and cream cheese ind. packets temped at 53 degrees. Staff discarded yogurt and cream cheese and adjusted the thermostat on the unit which was reading 64 degrees.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed no thermometers being held within the Cold Hold units. Thermometers need to be placed within cold hold units and hot hold units.
