12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Not following proper 2 bucket sanitizer solution method to wipe food prep surfaces. Used 2 bucket method but 1 bucket had detergent and the 2nd bucket had sanitizer. If using 2 bucket solution method to wipe food prep surfaces then both buckets should have sanitizer in them to successfully clean food prep tables. COS Staff made new buckets with both having sanitizer solution in them.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed ice build up on cooling fan in Walk in freezer and accumulating heavily on hoses. Ice build up needs to be removed and cleaned so that it does not leak or drip on to food and cause cross contamination.
