Observed dishwasher not at proper concentration of 50-100 ppm for chemical sanitation. CA: A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions. PA: PIC will have dishwasher repaired and the dishes will be washed, rinsed and sanitized in the 3 compartment sink.

CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. PIC will have the exterior of the RIF cleaned.
