4-2B - food-contact surfaces: cleaned & sanitized

Observed the sanitizer concentration at the 3 compartment not at 50 ppm for chlorine. CA: Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration, and Hardness. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions. PIC made new sanitizer.

Observed no food allergy awareness statement posted for the customers. CA: Observed the facility had no written consumer notification of the presence of major food allergens in unpackaged food items. CA: The permit holder shall notify consumers by written notification of the presence of major food allergens as an ingredient in unpackaged food items that are served or sold to the consumer. PIC was provided with a copy of the Food Allergens and Allergen Awareness handout. PIC will post an allergy awareness sign.
12D - washing fruits and vegetables

Observed the vegetable sink being used to wash chicken. CA: Except as specified in paragraphs (g)2 and 3 of this subsection and except for whole, raw fruits and vegetables that are intended for washing by the consumer before consumption, raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. PIC will designate the one compartment sink as the vegetable sink.

Observed the RIF not clean to sight or touch. CA: Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC will have the RIF cleaned.
