Observed chicken in prep top cooler and beef in the WIC not covered. CA: Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. PIC covered the food items.

Observed employee's drink stored on the prep table. CA: . Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. PIC discarded the drink.

Observed a plastic bowl being used as a scoop in the sugar. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. PIC will replace the bowl with a scoop.

Observed the floor in the WIC/WIF not free from an accumulation of food debris. CA: Except as specified under subsection (2)(d) of this Rule and except for antislip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. PIC will have the floor cleaned.
