6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed the following foods cold holding above 41 degrees F: several large containers of general chicken, chicken wings, raw beef, raw chicken, raw shrimp, cooked shrimp, and cheese blocks. CA: TCS foods must be cold held at 41 degrees F or below. COS: PIC discarded foods
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed the following foods stored uncovered: broccoli on counter top; 2 containers of white onions and 2 containers of green onions, shrimp, chicken, and 10 sauce containers in bottom of prep cooler; egg soup, mushroom soup, hot soups and hot water in steam table of main kitchen. CA: TCS foods shall be maintained covered. COS: PIC covered foods
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed green peppers cut and not washed prior to washing in vegetable sink. CA: Fresh produce must be washed prior to preparing. Must be corrected within 10 days.
