Observed remains of old food stuck to clean, ice cream scoops, spatulas, spoons, pans, plates and bowls, a cup and can opener all stored on prep table and shelves in main kitchen and dish washing area, plate crate holder in main kitchen, under shelf of steam table in main kitchen and in drawers under prep table in the main kitchen. CA: Food contact surfaces must be clean to sight and touch. COS: Employee rewashed dishes in 3 compartment sink and dishmachine.

Observed no temperature measuring device available for testing the sanitizing rinse temperature of the dish machine. CA: A temperature measuring device shall be provided and readily accessible for frequently measuring the sanitizing temperatures of warewashing machine
