CA: According to the PIC, items had only been stored on the cart for about 15 minutes. Items were placed on the Hot Hold Line to rapidly reheat.

Observed multiple food items in the Roll Top Prep Cooler not 41 degrees F or lower (ambient air, wasabi, crabmeat). Observed margarine reading "keep refrigerated" at 67 degrees F at the bottom of a prep table.
CA: Cooler was closed shut. Cooler was left opened during service. Once closed for a while, the temperatures dropped to 43 and below. Margarine was discarded.
