Observed staff member serving food on the front-service line with watch on their wrist.

Rule: All staff involved in prepping food may not wear jewelry including medical information jewelry on their arms and hands while preparing food.

Observed dirty dishes left in prep sink that is used for washing vegetables. Rule: Raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only.

Observed shelving units above 3 compartment sink with rust and visible debris. Rule: Equipment shall be maintained in good repair.

Observed dishwasher not pulling any sanitizer.

CA: Dishwasher was puled from rotation and all dishes will be washed in the 3 compartment sink. A service call was placed. Machine cannot be used until repaired and checked/cleared by Effingham County EH.

RCA: A chlorine solution shall have a minimum temperature based on the concentration and pH of the solution of 50-100ppm with a temperature o=above 100F.

Facility shall utilized three compartment sink, until dishwasher has been serviced.

Observed wet stacking of plates and bowels within the dishwashing area.

RCA: Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

1. Shall be air-dried or used after adequate draining before contact with food; and

2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Observed uncovered tea pitchers in the waitress area. Observed uncovered biscuits in the Walk In Freezer and in a Reach In Cooler.

CA: Items were covered.

Observed multiple food items stored on the floor in the Walk In Freezer.

Observed missing thermometers in coolers. RCA: Obtain thermometers that are accurate and place in missing coolers for maintenance of food and ambient air temperatures.
