Observed multiple food items, prepped or removed from their original packaging over 24 hours ago, or removed from a larger container in he Walk In Cooler, missing date labels (seafood biscuits, cooked chicken, fried chicken, lo mein, etc.)
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed raw frozen shrimp thawing in stagnant water.
CA: Shrimp was fully submerged in prep sink under water below 70 degrees Fahrenheit.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed material (epoxy) hanging from the ceiling in the Walk In Cooler.
