12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
No hair restraints being worn in rear where several employees were observed prepping unwrapped food. Employees prepping or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints (hair nets, hats, or other effective means) approved by the Health Authority worn properly to restrain loose hair including beards and mustaches longer than 1/2 inch. Staff stopped duties to apply hair restraints and wash hands before beginning duty again to COS.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Need to clean shelves of walk in cooler, handles of line coolers including white coolers, and fan guards in walk in cooler. Keep cleaned at a frequency to prevent accumulations so that residues do not have an opportunity to grow microbes which may be transferred to other surfaces or foods. Repeat of category. carts also need to be cleaned/have residue.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Ceiling tiles over sandwich prep station are peeling and need to be replaced to prevent pieces from dropping into food that may be uncovered during prep.
