6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed containers/bags of RTE foods (Shrimp, ham, tartar sauce) held past 7 day discard date. Ensure RTE Foods prepared and held longer then 24 hours are used or discarded by 7 day discard date. Items discarded.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed sheet rock wall damage at dish line and storage. Repair walls to be smooth and easily cleanable. Also need to clean WIC floor. Raising lowest shelf to at least 6" off floor will aid in cleaning floor. Correct by 10/2/25.
