Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed no current date marking on any food items in the restaurant...homemade sauces in large pour containers in prep cooler, nothing in WIC date marked, large containers of salsa in refrigerators. CA: ALL PHF should be date-marked to be discarded within 7 days of prep or opening.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no test strips for dish washer. CA: Must have test strips and dish washer should be tested frequently to ensure proper amount of sanitizer is dispensed.
