6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed mac and cheese in warming cabinet at 130 degrees F and 129 degrees F for hot holding. C/A - have cabinet serviced so it can maintain 125 degrees F or above even with door opening often. COS - managers had food removed from cabinet and reheated since it had been under temp for less than two hours.
