6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Ready to eat TCS foods shall be date marked with the date the foods were opened or prepared if held in the establishment for more than 24 hours and held for no more than 7 days. Observed a container of cooked refried beans, containers of deli meat and hot dogs that had been opened or prepared more than 24 hours prior which were not date marked. PIC placed date marks on all containers.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Establishment shall be maintained clean and in good repair. Storage room is missing tiles and has an exposed drop cieling. Ceiling tiles in kitchen are stained and dusty and require replacing and cleaning.
