6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS items not holding temperatures of 41 degrees F or below. (see temperatures above) COS: PIC discarded the food items. Code: TCS foods that use cold holding as a control for safety shall be held at 41 F or below.
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observed several employee drinks stored in single use containers on food contact surfaces. (between warmer pass thru, on prep counter near the grill) COS: PIC discarded drinks. Code: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.05(3)(a) - cooling, heating, and holding capacities (pf)
Observed the reach in cooler to the left side of the grill did not hold the correct ambient temperature to support cold TCS food items. Code: Equipment for holding cold and hot food, shall be sufficient to hold foods at the proper temperature.
