Observed unlabeled spray bottles. COS. Labeled. CA: Working containers of chemicals shall be labeled with the common name of the product.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(u) - food display (p)
Observed that the facility has installed a new sneeze guard to protect food, whoever, it does not fully cover the food nor the sides/end caps. CA: Food on display shall be properly protected from consumer contamination.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed containers stacked while wet. CA: Containers shall be thoroughly air dried prior to stacking.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed single-use containers were stored upright. COS. containers inverted. CA: Utensils shall be stored to protect the use-end.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris on the inside of equipment. CA: Equipment shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris on floors, particularly in the walk-in's and in the trailers. CA: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
