16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed that the original water heater went out and that a new one was installed; person-in-charge states that this was done ~7 months ago. The new water heater does not meet the peak theoretical demand of the facility. CA: Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damaged and broken tiles in the kitchen; observed accumulation of grease and debris on walls and ceiling tiles. CA: Facility shall be maintained in a state of good repair; facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
