2-1B - hands clean and properly washed

Observed several employees who were preparing food, stopped to wash utensils/equipment, and then began preparing food again without washing their hands or changing their gloves. COS. Employees were stopped and prompted to wash their hands. Code: Prior to wokring with food, when changing tasks, or when contamination occurs employees shall wash thier hands.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed that the facility is storing their bulk/extra cooked pastries in the back on speed racks and trays that are uncovered in the main kitchen. COS. Covered. Code: Food shall be stored covered.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed that the facility is attempting to washing equipment and utensils by only wiping them with soiled wet wiping cloths instead of properly cleaning in the 3-compartment sink. COS. Employees were educated on properly cleaning utensils. Code: Food contact surfaces shall be clean to sight and touch.
4-2B - food-contact surfaces: cleaned & sanitized

Observed that the facility was not sanitizing the utensils (knives, bowls) they cleaned before use. COS. Utensils were sanitized in the 3-compartment sink. Code: Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.
12A - contamination prevented during food preparation, storage, display

Observed that the facility is storing food in the main kitchen area on the counter where it is exposed to splash. COS. Items moved. Code: Food shall be stored in a manner where it is protected from contamination.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloths stored in empty sanitizer buckets in the back preparation area. COS. Sanitizer solution added. Code: Wet wiping cloths shall be stored in sanitizer solution at the appropriate concentration between uses.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed that the facility is attempting to wash dirty utensils in the produce sink. COS. Staff educated and sink was washed, rinsed, and sanitized in place. Code: Produce sinks shall only be used for washing produce.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed that employee belongings stored with food and food contact surfaces in the front food service area. COS. Removed. Code: Employee belongings and activities shall be in designated locations that prevent contamination of food and food contact surfaces.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed that bowls were being used as scoops in containers of bulk dry foods and observed scoops being stored in the product with the handle touching the product, all noted in the back preparation area. COS. Removed. Code: Scoops shall have handles and the handles shall be stored above the level of the product.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed that the facility has installed a thin, flimsy splash guard in the front food preparation area that is attached to the counter using tape. Code: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(m) - maintenance tools, storage (c)
Observed that the facility is storing dustbusters on the counters in the front food service area with and above food and food contact surfaces. COS. Removed. Code: Maintenance tools, including items such as vacuums, shall be properly stored to prevent contamination of food and food contact surfaces.
