Observed TCS items on the prep line holding temperatures above 41 degrees F. (see temperatures above) COS: PIC removed those items from the line and replaced them with new items. Code: time/temperature control for safety food shall be maintained at 41°F.
14B - utensils, equipment and linens: properly stored, dried, handled

Observed wet nesting of containers. COS: Unstacked wet food storage containers Code: Containers shall be thoroughly air dried prior to stacking.
