Observed food service employee wearing jewelry (watch) while making drinks. COS. Removed. CA: Except for a plain band ring, food service employees shall not wear jewelry on their arms and hands, to include medical id bracelets.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloths stored on counter. COS. Wet wiping cloths were removed. CA: Wet wiping cloths shall be stored in sanitizer solution at the appropriate concentration.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed the back door in the kitchen did not close fully. CA: Exterior openings shall be self-closing and tight fitting.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed wet nesting of containers. COS. Unstacked to properly air dry. CA: Equipment and utensils shall be properly air dried prior to stacking.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris on the inside of equipment. CA: Equipment shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris on the floors; observed damaged flooring, especially the storage room. CA: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation; facility shall be maintained in good repair.
