LOWE'S COUNTRY KITCHEN

Observed TCS food (grits - 81 degrees Fahrenheit) date marked 4/21/26 stored in a cooler on the main cook line. Per the PIC, the grits had been held under a time procedure the day prior and were cooled and reheated on 4/22/26. CA: Foods held under a Time as a Public Health Control Procedure must be discarded after 4 hours. COS: The CFSM discarded the grits and will discard all TCS foods held under a TPHC procedure after 4 hours.

Observation: Observed soiled cardboard being used to store containers to store containers of used oil on next to fryers in main kitchen area.

Corrective Action: Discussed nonfood contact surfaces with the PIC. The PIC discarded the cardboard and will use a cart that can be easily cleaned so that the containers are 6 inches off of the floor.

Observed sanitizer dispenser not operating. PIC is mixing sanitizer by measuring. All sanitizer solutions are within the proper parts per million. CA: PIC will have sanitizer dispenser serviced and repaired. PIC will contact Health Department when dispenser has been repaired.

Observed sanitizer dispenser at three compartment sink not dispensing the proper parts per million to sanitize utensils and equipment. CA: Discussed with PIC, manually preparing sanitizer solution at proper parts per million for sanitizing of equipment and utensils. PIC will have sanitizer dispenser serviced and will contact Health Department to be rechecked.
