Observed TCS food (grits - 81 degrees Fahrenheit) date marked 4/21/26 stored in a cooler on the main cook line. Per the PIC, the grits had been held under a time procedure the day prior and were cooled and reheated on 4/22/26. CA: Foods held under a Time as a Public Health Control Procedure must be discarded after 4 hours. COS: The CFSM discarded the grits and will discard all TCS foods held under a TPHC procedure after 4 hours.
