Observed TCS food held above 41 degrees F. in coolers less than 4 hour. CA: TCS food must be held at a minimum 41 degrees F COS: pic placed food into ice bath to rapidly cool down.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed utensils with food build up stored with clean utensils. CA: Utensils must be maintained clean and sanitized during storage. COS: pic cleaned utensils
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observed Chlorine sanitizer above 200 ppm. CA: Chlorine sanitizer must be maintained within allowed level. COS: pic diluted and re-tested between 50-100 ppm.

Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed single use food containers reused. CA: Single use food containers cannot be reused. COS: pic will purchase new food containers (NSF or equivalent). Health Dept. will re-check
