Observed front reach-in cooler not maintaining temperature at 41 deg F or below. During the inspection, the digital thermometer on the cooler measured up to 50 deg F with the doors open. After closing the reach-in doors for 45 minutes and placing a new thermometer in the cooler, the ambient temperature measured 48 deg F. The cooler was observed to be in defrost mode and per PIC, it has never been in defrost for longer than a few minutes.

Corrective Action: PIC was notified and will submit work order to have the cooler serviced. A "DO NOT USE" sign was posted on the cooler and it may not be used until rechecked by the Health Department. Please contact the Health Department at (706)295-6316.

Observed prepared tossed salads (with sliced tomatoes and cucumbers) on cold buffet unit that had not been cooled to 41 deg F before being placed on serving line. Corrective Action: Discussed and educated PIC on cooling methods. The salads were prepared less than four hours ago and were brought back to the walk in freezer to rapidly cool to 41 deg F before being put on the serving line.

Observed significant gap in gasket on the left side of the front food service milk cooler.

Corrective Action: PIC was notified and will submit work order to have the cooler repaired. Until the cooler has been repaired, all milk will be stored in walk-in cooler when they are not actively serving students. When serving milk from the cooler, only a small quantity of milk crates should be stored in the right side of the cooler. The Health Department will recheck this.
