6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food held above 41 degrees F in 2 different coolers in outside building and on porch. CA: Cold held foods must maintain at a minimum 41 degrees F. COS: pic discarded pulled pork (46 dated 4-27, pork loin at 54 and bbq sauce at 49 dated 4-27). Eggs and buttermilk were moved to rapidly cool in working cooler. Coolers serviced and re-checked 5/4/26. Gaskets ordered.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed gaskets on most coolers and chest freezer in poor condition. CA: Gaskets on equipment must be maintained in good condition. COS: pic will have torn gaskets replaced. Health Dept. will re-check
