observed multiple containers of food not labeled. CA: Discussed labeling all food containers with pic. COS: pic labeled food

observed squeeze bottle of swtn condensed milk poured from can on counter at 66 degrees F. CA: discussed cooling methods with pic and pre-chilling cans for easier cooling with pic. COS: pic discarded swt cond milk and will use approved methods for cooling food from can.

Observed processed ready-to-eat, potentially hazardous food (milk, heavy whipping cream) opened and not properly date marked. Corrective Action: Discussed date-marking requirements with PIC. These items were found to be open less than 24-hours and were date marked. PIC will re-train food service employees on date marking.

Observed handwashing sink blocked with dirty dishes and not able to be used at the start of the inspection. Corrective Action: Discussed keeping handwashing sinks accessible at all times for employee use. All dishes were removed from the handwashing sink by food service employee.
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed accumulation of standing water under handwashing sink. The water was accumulating around metal clean water tank. Corrective Action: Discussed maintaining plumbing system in good repair. PIC must have the plumbing properly serviced and repaired to continue operating. PIC will call the Health Department at (706) 295-6316 to have this rechecked.

Regulation: 511-6-1.04(6)(d) - cooling (p)
Observed potentially hazardous TCS foods (whipped cream) prepared from mixed ingredients at room temperature not cooled to 41 deg F within 4 hours. Tres leches mix was also cooling and observed to be at 50 deg F after 2 hours.
Corrective Action: PIC was notified and educated on required cooling times, temperatures and methods. The whipped cream was discarded by PIC. PIC was given option to continue cooling tres leches mix with ice bath but chose to discard.
