Observed personal drink with no lid/straw stored next to equipment and on prep table in kitchen. CA: Personal drinks must be in single use cup with lid and straw and stored in designated area away from food and equipment. COS: pic discarded personal drink.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed multiple bags of food stored unsealed in open bags in freezer chest and in walk in freezer. CA: Food should be stored covered properly during cold holding. COS: pic covered food and discarded some food with ice buildup on food (sausage/hotdogs).
6-2 - proper date marking and disposition

Observed multiple food containers not date marked in cooler and freezer. CA: Food must be date marked when cooked/prepared and/or frozen. COS: pic discarded food with no date marking.

Observed wiping cloth sanitizer not testing at minimum ppm for wiping tables in dining room. CA: Chlorine sanitizer for wiping surfaces must test at minimum ppm COS: PIC remade and tested.

Observed chests freezer inside kitchen not operating. CA: Equipment must be maintained in good condition. COS: pic will have freezer removed. Health department re-checked

Observed outside of food containers and inside chest freezer with dried food build up. CA: Food containers must be maintained clean to sight and touch. COS: pic cleaned sauce bottles and inside of chest freezer.
