CA: Employees shall drink from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands and surfaces. COS: The unapproved personal drinks were removed from the prep area. Discussed approved personal drinks with the PIC.

Observation: Observed multiple pre-portioned servings of pasta cooling in individually sealed plastic bags in prep top cooler on main cook line. CA: TCS foods cooling in cold-holding equipment should be loosely covered in order to facilitate proper cooling. COS: The pasta had been cooling for less than 2 hours and was moved to the walk-in freezer to be properly cooled. Discussed leaving pasta uncovered and keeping it in multiple containers to cool. Discussed monitoring cooling temperatures to ensure all TCS foods are properly cooled. Final cooling temperature of the pasta verified at 41 degrees Fahrenheit.
