Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observation: Observed multiple personal drinks (water bottle, tumbler) stored in food prep area and without being stored in a single use cup with a lid and straw. CA: Employees shall drink from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands and surfaces. COS: The unapproved personal drinks were removed from the prep area. Discussed approved personal drinks with the PIC.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observation: Observed multiple pre-portioned servings of pasta cooling in individually sealed plastic bags in prep top cooler on main cook line. CA: TCS foods cooling in cold-holding equipment should be loosely covered in order to facilitate proper cooling. COS: The pasta had been cooling for less than 2 hours and was moved to the walk-in freezer to be properly cooled. Discussed leaving pasta uncovered and keeping it in multiple containers to cool. Discussed monitoring cooling temperatures to ensure all TCS foods are properly cooled. Final cooling temperature of the pasta verified at 41 degrees Fahrenheit.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observation: Observed damaged gasket on the door of the walk in freezer resulting in the accumulation of ice around the door. COS: Equipment components such as doors or seals must be kept in a state of good repair. CA: No COS observed. Discussed having the gasket repaired or replaced with the PIC. The PIC will have the gasket repaired/ replaced. This will be rechecked by the Health Department.
