6-1A - proper cold holding temperatures

Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)

9 ptsCorrected: YesRepeat: No

Observed multiple potentially hazardous TCS foods (grilled chicken - 43, pimento cheese - 44, chicken salad - 45, cooked tomatoes - 45, cooked mushrooms - 46) cold-holding at a temperature greater than 41 deg F in front sandwich cooler. No ambient thermometer was observed in the upper or lower part of the unit. The digital thermometer on the display was reading 47 deg F.
Corrective Action: Discussed proper cold holding temperatures with PIC. PIC discarded food items stored in the cooler overnight. Items placed in the cooler during prep this morning were brought back to the reach-in cooler to rapidly cool back down to 41 deg F or below. The PIC placed the unit out of service and will have it serviced by a licensed technician. Please call the Health Department at 706-295-6316 once repaired to have this cooler rechecked prior to use.

6-1A - proper cold holding temperatures

Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)

9 ptsCorrected: YesRepeat: No

Observed multiple potentially hazardous TCS foods (mayo - 44, pico - 43, ranch - 44, cooked pork - 50) cold-holding at a temperature greater than 41 deg F in front sandwich cooler. Corrective Action: Discussed proper cold holding temperatures with PIC. PIC discarded food items stored in the cooler overnight. Items placed in the cooler during prep this morning were to be cooled down to 41 deg F. PIC was able to put ice wands in lower portion of cooler which improved cold-holding temperature. All food will be discarded after the end of lunch and cooler will be placed out of service until serviced by a licensed technician. Please call the Health Department at 706-295-6316 once repaired to have this cooler rechecked prior to use.

4-2B - food-contact surfaces: cleaned & sanitized

Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)

4 ptsCorrected: YesRepeat: No

Observed chlorine sanitizer in mechanical warewashing equipment not at a minimum concentration for chlorine. The food service employee just completed a washing cycle with facility equipment just prior to testing. Attempted to test the sanitizer in original chemical container which measured 0 ppm and was clear in color. The facility did not have any additional containers of chlorine sanitizer for the machine during the inspection. Corrective Action: Discussed minimum concentration requirements with PIC. PIC was instructed to place the machine out of service and the facility will only use the 3-compartment sink. The machine must be serviced by a licensed technician and rechecked by the Health Department prior to use. Documentation is required.

6-2 - proper date marking and disposition

Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)

4 ptsCorrected: YesRepeat: No

Observed ziploc bag of previously cooked and cooled pork in lower reach-in cooler with date exceeding 7-days. The bag was labeled "3/10-4/10" and PIC states this was the "freeze" date and it was most likely pulled two days ago. Corrective Action: Discussed date marking requirements, including freezer dates, with PIC. The pork was discarded. When date marking items that are prepared and frozen, the preparation date, freeze date, and thaw date must be indicated on the original container. PIC will re-train staff.

Routine

Score: 903 violations

6-1A - proper cold holding temperatures

Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)

9 ptsCorrected: NoRepeat: No

Observed multiple potentially hazardous TCS foods (thousand island - 44, sliced tomatoes - 44, deli meat - 47, cooked mushrooms - 46) cold-holding at a temperature greater than 41 deg F. No ambient thermometer was observed in the unit. Corrective Action: Discussed proper cold holding temperatures with PIC. These items were placed in the cooler less than 1 hour prior and were able to be moved to the walk-in to rapidly cool back down to 41 F or below. PIC placed the unit out of service and will have it serviced by a licensed technician.

Observed potentially hazardous TCS food (house made chicken salad - 46 F) cold-holding at a temperature greater than 41 F in front open air grab and go cooler. No date was observed on the container. The ambient thermometer in the unit read greater than 45 F. Corrective Action: Discussed proper cold-holding with PIC. Per PIC, the chicken salad was prepared two days ago. Because it was unclear when the chicken salad was placed in the cooler and no date marking was present, the chicken salad was discarded. If the front grab-and-go cooler is not able to properly cold hold items at 41 F or below, no TCS foods should be placed in the cooler. PIC will monitor temperatures on the cooler and will not place TCS foods in cooler unless it is able to properly cold hold.

15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)

1 ptsCorrected: NoRepeat: No

Observed gapping and bent metal on doors of large prep-top cooler. Food service employee was observed using the prep-top area to cool individual cups of pasta salad and broccoli salad. The left lower reach-in door was also noted to have clear tape. Corrective Action: Discussed maintaining all equipment, including doors and gaskets, in good repair with PIC. PIC will have the doors on this cooler repaired and will have employees place cooling items in walk-in cooler. This will be rechecked by the Health Department in 30 days.
