Observed hand wash station without paper towels. Paper towels for dispenser were not alliable due to ordering error. CA: PIC set available paper towels in handwashing area. PIC will have correct paper towels for dispenser ordered but will use available paper towels until order arrives.

No CFSM certificate posted in public view at food service establishment. Per the PIC, the previous CFSM ceased to work at the facility approximately two weeks ago. The manager for another location is currently managing this location but no CFSM certificate is posted. Corrective Action: The current manager must post a current copy of the CFSM certificate, if already completed, in public view of the food service establishment. CFSMs can be designated to only one food service establishment; therefore, a new CFSM must be designated, hired or transferred from another location if current manager is already CFSM at different location. Documentation of class enrollment must be provided to the Health Department by 05/10/2024.

Observed bucket of sanitizer stored on lower shelf next to single-use articles (cookie containers, churro/pretzel sleeves.) Corrective Action: Discussed proper storage of toxic substances with PIC. Due to concerns for possible contamination, a small opened package of pretzel sleeves were discarded.

Observed single-use cups stored on counter of handwashing sink without protection. Corrective Action: Discussed proper storage of cups to prevent splash from handwashing sink. The cups that were contaminated were discarded and remaining cups were relocated away from the sink. PIC will need to find a permanent place to store the cups to prevent contamination.

Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous TCS food (sliced tomatoes) cold holding in prep top above 41 deg F. Per PIC and temperature log, the tomatoes measured 40 deg F that morning the prep top was checked. Corrective Action: Discussed with PIC. Because the tomatoes were less than four hours old, the pan was brought to the walk in cooler to rapidly re-cool. All other TCS foods were found to be cold holding at 41 deg F or below. Discussed rearranging TCS foods on prep-top cooler and placing thermometers on both ends to ensure the unit is performing properly.

Observed handwashing sink blocked by bread rack. Per PIC, the lack of space due to the new slicing process, this is the only place they can store the rack without blocking equipment. Corrective Action: Discussed handwashing sink requirements with PIC. The handwashing sink must be accessible at all times for employee use and cannot be obstructed. The bread rack will be relocated and cannot be stored in front of the handwashing sink.
