Improper hot holding of potentially hazardous, TCS foods below 135 degrees observed during inspection. Hot Dog- 116 degrees, Corn Dog- 110 degrees, and French Fries- 105 degrees under cookline heat lamp. Corrective Action: CFSM was notified. All out of temperature foods were found to be less than 1 hour old and were properly reheated to 165 degrees as required prior to hot holding. Discussed proper hot holding procedures for TCS foods. Discussed procedures for time as a control as an alternative for food items held under heat lamp.

Observed potentially hazardous, TCS foods cold held at greater than 41 F. Large pack of hot dogs measured at 43 degrees in back reach-in cooler. Corrective Action: Discussed with CFSM. Hot dogs were found to be in cooler since previous day and were discarded. Other non-TCS food items such as pickles and jalapenos were checked as reference temperatures and measured at 43-44 degrees in this unit. Employees were instructed not to use this unit for TCS food storage until it has been serviced by and/or repaired by a licensed professional. Cooler must be rechecked by Health Dept ensure proper cold holding temperature.
