Observed potentially hazardous TCS foods cold holding in the reach in cooler above 41 degrees F (cream cheese 43 F, smoked sausages 48 F.) Internal temperature measuring devices were reading 45-50 deg F.

Corrective Action: PIC was notified and all TCS foods were discarded (cream cheese, smoked sausages, whipped cream) as they had been in the cooler overnight. The reach in cooler was put out of service and will not be used to store any TCS foods until the unit has been serviced by a licensed technician and checked by the Health Department. Documentation of the services must be available for review.
