Observed TCS foods in reach in cooler in front service area holding higher than 41 degrees F (chicken and egg rolls 44-46 degrees) less than 4 hours. CA: TCS foods under must maintain at minimum 41 degrees F or below. COS: pic rapidly cooled down chicken and egg rolls in freezer

Observed large bus tub of rice in walk in cooler at 148 degrees F less than 1 hour. CA: Cooling must be done by approved methods for rapidly cooling of food. COS: pic portioned rice into smaller amounts and placed in area where more air flow can help facilitate rapid cooling of food.
