Observed PIC not performing duties and unable to demonstrate knowledge of food safety guidelines and risk factors. Observed improper date marking of TCS foods and lack of understanding amongst several food service employees in the kitchen. Observed potentially hazardous TCS food (cheese cubes) held past the 7-day discard date. Observed time as a public health control being used without proper labeling. Observed sanitizer prepared above the approved concentration. PIC reported an unapproved cleaner was being used on food contact surfaces.

Corrective Action: Educated PIC on date marking procedures and 7-day rule, discarding food by discard date, labelling when using time as a public health control, preparing and testing sanitizer and use of only approved cleaners, quat or ammonia based, to clean food contact surfaces. PIC and CFSM should re-train kitchen employees on basic food safety requirements. Recommend PIC take a CFSM course to develop knowledge of food safety guidelines for foodborne disease prevention.
