6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous TCS foods (sliced deli ham=45°F, sliced tomatoes=49°F, and sliced cucumber=44°F) cold held above 41°F in prep top cooler. CA: Temperature control for safety (TCS) food items shall be maintained at 41°F or below or 135°F or above. COS: Sliced deli ham, sliced tomatoes, and sliced cucumbers were observed to be cold holding above 41°F for greater than 4 hours. PIC discarded those food items.

Observed potentially hazardous TCS foods (sliced deli turkey=44°F) cold held above 41°F in prep top cooler. CA: Temperature control for safety (TCS) food items shall be maintained at 41°F or below or 135°F or above. COS: Sliced deli turkey was found to be above 41°F for less than 4 hours. Sliced deli turkey was relocated to reach-in cooler to rapidly cool to 41°F or below before being placed back into prep top cooler.
