Observed ice condensation accumulating on ceiling dripping on two food boxes in walk-in cooler. CA: Discussed with PIC ice build-up in walk-in freezer. Equipment must be maintained in a state of repair and condition that prevents contamination of foods. COS: PIC repositioned food boxes away from ice condensation drip and will place a cover on top shelf to catch any drip from ice condensation. PIC has already submitted service ticket for walk-in freezer. Health dept. will return to recheck.

Observed potentially hazardous TCS food (oat milk- 48 deg F) cold-holding at a temperature greater than 41 deg F in carafe at condiment bar. Per PIC, they are not using a time procedure for the condiment bar, only temperature control. The other item offered in a carafe at the condiment bar (half 'n half) was holding at 40 deg F. Corrective Action: PIC was notified. After speaking with food service employee, both carafes were refilled at the same time (2 hours prior) and the items were pulled from different cold-holding units. The oat milk was pulled from a small reach-in cooler (CBS cooler) with temperature alert on tablet with remote temperature monitoring. No ambient thermometer was noted in this reach-in cooler. The oat milk was discarded and PIC was instructed to post "No TCS foods" on reach-in cooler. This cooler must be serviced by a licensed technician and re-checked by the Health Department prior to use.

Observed multiple chlorine sanitizer solution storing wiping clothes not at minimum strength (200 ppm.) When notified to replace solution, food service employee observed air bubbles in sanitizer line and lack of sanitizer solution pulling through the hose. Corrective Action: PIC was notified and will contact Ecolab to have chemicals serviced. Facility switched to using Kay-5 sanitizer solution packets and Health Department provided PIC with chlorine testing strips. Please contact the Health Department to have chemicals re-checked once serviced by Ecolab.

Observed open container of half and half in front food service cooler past expiration date (2/21/2025). Corrective Action: Discussed use-by and expiration dates with PIC. PIC discarded the item.

Observed high temperature dishwasher final rinse cycle not reaching 165 deg F. CA: PIC notified. Dishwasher to be serviced by licensed technician. PIC instructed food service employees to use three compartment sink to wash, rinse and sanitize until the dishwasher has been repaired. Please call the Health Department at 706-295-6316 to recheck once serviced.
