Observed cheesecake (45°F) and cream cheese icing (47°F and 46°F) cold held greater than 41°F in display cooler. CA: Temperature control for safety (TCS) food items shall be maintained at 41°F or below or 135°F or above. COS: Temperature of cheesecake and cream cheese icing was observed to be greater than 41°F for less than 4 hours. Cheesecake and cream cheese icing were placed into walk-in cooler to rapidly cool to 41°F or below before being placed in display cooler. Recommend reach-in display cooler to be serviced to ensure internal temperature is maintained at 41°F or below. This will be rechecked by health dept.
