Observed no soap at hand washing in kitchen. CA: Handwashing sinks must be supplied with cleanser at all times for proper hand washing COS: pic replaced soap container.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed wiping cloth sanitizer buckets actively used not testing at minimum ppm for quat sanitizer. CA: Sanitizer must be at the minimum ppm for sanitizing food contact surfaces. COS: pic will have sanitizer machine serviced. Health Department will re-check 3/31/26 Sanitizer machine calibrated/serviced and re-checked.

Observed in house made sauce at 66 degrees placed into reach in cooler in deep, plastic sealed container. CA: Equipment and methods must be adequate for rapid cooling of food. COS: pic placed food into ice bath, smaller portions.

Observed TCS food thawing at room temperature. CA: Approved thawing methods must be used when thawing TCS foods. COS: pic placed frozen food back into cooler.

Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed broken cooler drawer below grill. CA: Equipment must be maintained in good repair. COS: No correction on site. Health Dept. will re-check.

Observed food build up from night before on cooking equipment, storage plates throughout kitchen. CA: Nonfood contact surfaces must be maintained clean. 3/31/26 re-check on cleaning. COS: no correction on site. Health Department will re-check.

Observed toilet door open and not self-closing. CA: Toilet doors must be self-closing. COS: pic will have door closure repaired. Health Dept will re-check.

Regulation: 511-6-1.07(2)(c) - floor and wall junctures, coved, & enclosed or sealed, water-flushed floors provided with drains & graded to drain (c)
Observed floor drain missing cover at produce sink. CA: Floor drains should be in good repair and graded to drain properly with air gaps for pipes coming from food prep sinks and 3 compartment sink. COS: No correction on site. Health Dept will re-check.
