CA: PIC discarded TCS foods exceeding 4 hours since being taken from working cooler. All salvageable TCS foods were relocated to walk in cooler to be cooled to proper cold holding temperatures. Employees were instructed not to use prep top cooler for TCS foods until serviced by a licensed professional and rechecked by Health Department to ensure cooler is reaching 41 degrees or below.
