14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observation: Observed tongs stored directly on metal shelf in reach-in freezer when not in use. CA: Utensils must be stored in a clean, protected location when not in use. COS: Discussed storing in-use utensils with the CFSM. The CFSM had the tongs properly cleaned and will educate staff on proper storage of in-use utensils.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observation: Observed reach in cooler at the front food service counter and mechanical dish machine out of order and not in use. CA: Equipment must be maintained in a state of good repair COS: No COS observed. The CFSM will have the equipment serviced. The cooler will not be used to store TCS foods until it has been properly serviced by a licensed technician. This will be rechecked by the Health Department.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observation: Observed an accumulation of grease on the vent hood filters and beneath the fryers on the main cook line. CA: Nonfood-contact surfaces must be cleaned at a frequency sufficient to prevent the accumulation of soil residue. COS: No COS observed. The CFSM will have the area cleaned and increase cleaning frequency. This will be rechecked by the Health Department.
