6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food (sliced cheese 46 degrees Fahrenheit) cold holding at greater than 41 degrees Fahrenheit in prep top cooler on the main service line. The cheese was observed to be stacked above the designated fill line in the metal pan. CA: TCS foods must be cold held at 41 degrees Fahrenheit or less. COS: Per the PIC the cheese had been moved from a different cooler less than 1 hour prior. The cheese was moved to a different cooler to be properly cooled down. Temperatures were taken to verify prep top cooler functionality.

Observed TCS food (waffle batter 49 degrees Fahrenheit) cold holding above 41 degrees Fahrenheit in reach in cooler on the main service line. CA: TCS foods must be cold held at 41 degrees Fahrenheit or less. COS: The PIC discarded the waffle batter.

Observed TCS food (gravy 125 degrees Fahrenheit) hot holding below 135 degrees Fahrenheit in steam well located in the front main kitchen area. CA: TCS foods must be hot held at 135 degrees Fahrenheit or greater. COS: The PIC discarded the gravy.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed daylight underneath the back door when the door was closed. CA: Outer openings must be protected by solid, self-closing and tight-fitting doors. COS: No COS noted at this time. The facility will have the weather stripping repaired/ replaced. This will be rechecked by the Health Department.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(l) - removing dead or trapped birds, insects, rodents, and other pest (c)
Observed dead roach bug in cabinet underneath soda dispenser on the main service line. CA: Dead or trapped pests should be removed from the premises at a frequency that prevents the attraction of other pests. COS: The facility removed the dead insect. Pest Control was verified at the time of inspection.
