Observed several pans of mashed potatoes cooling from day before (more than 6 hours) in walk in cooler at 51-, 45- and 44-degrees F. CA: Discussed 2 step cooling process with pic. COS: PIC removed food and discarded.

Observed packages of deli ham held past the expiration date in reach in cooler. (Best by dates were December 2, 2025, uncured deli ham, ham November 23 and 25th 2025) CA: Discussed expired foods and discarding by best by dates with pic. COS: pic removed and discarded deli meat packages with expired dates.
